It was in France that we learned the power of the Michelin Guide to restaurants. From soccer moms to garagistes (slang for winemakers in the Bordeaux), Le Guide Michelin is followed, analyzed and honoured. There are very few Parisian chefs who don't strive to be included in the annual guide. French families save up to dine in Michelin star restaurants, and plan trips around these culinary excursions. Each year's Michelin restaurant guide for France reveals a few surprises for Paris chefs and restaurants. Some restaurants lose their single stars while others may become surprise winners. In recent years, the happiest news for us was that our pal Jacques Faussat won back the star at his eponymous restaurant in the 17th Arrondissement.
