A Day In Champagne

We have have entered a world of ancient chalk caves that reaches back three thousand years. The essence of Champagne lies underground. When the Romans arrived in Gaul they extended the existing chalk caves and since then the caves have been expanded by slaves, monks, and Champagne makers.

The town and the caves have seen much over the centuries. Several cathedrals have been built above this site. Some of the cathedrals have burnt down, others were bombed, and generations of French have spent time living in the safety of these caves during tumultuous times. During WWI whole villages camped in these caves, building schools, medical treatment centres, and cooking facilities. It was the only safe place when their world above was the centre of bloody trench warfare and daily bombing.

Our guide takes us through every aspect of the making of Champagne. She relates the familiar legend of monk Dom Pérignon and his accidental discovery of sparkling wine. During World War I, she said, each French soldier was allotted one bottle of Champagne daily to brighten his day. She shows us cave after cave filled with vintage Champagnes lightly covered with dust. The chalk caves naturally provide a steady temperature and a dark environment perfectly suited for aging wine.

We are filled with Champagne history and lore. Now it is time to return to ground level and fill ourselves with the product. The tasting room is over lit and mundane but even the beige walls can't detract from the bubbles. We sample a brut, a rosé, a vintage and a demi-sec and leave Taittinger on a soft cloud…
